Risalamanda

Ingredients
- 200g of rice
- 300ml of milk
- 100g of sugar
- 100g of butter
- 1 egg
- 1 teaspoon of vanilla
- 100g of dark chocolate
- 100g of cream
- 100g of chopped nuts
- 200g of fruit compote
- 100g of sour cream
- 100g of castor sugar
Method
- In a pan, cook the rice in salted water. Drain and let it cool.
- In a saucepan, mix the milk, butter, sugar, and egg whites. Bring to a boil and let it cool.
- In another bowl, mix the rice with vanilla, cream, dark chocolate, and fruit. Add sour cream and castor sugar.
- Whip the egg whites in a separate bowl.
- In a baking dish, place a layer of rice, cover with the milk and fruit mixture, and finish with the whipped egg white crust.
- Make a central cut in the dessert and pour the fruit compote over it.
- Bake for 30-40 minutes at 180°C until the crust is golden and crispy.
The story
Risalamanda is a traditional Danish dessert that originated in the 1930s. The name is said to have come from a cook's mistake, writing 'amalisa riso' instead of 'riso amalisa'.
