Ingredients

  • 200g of rice
  • 300ml of milk
  • 100g of sugar
  • 100g of butter
  • 1 egg
  • 1 teaspoon of vanilla
  • 100g of dark chocolate
  • 100g of cream
  • 100g of chopped nuts
  • 200g of fruit compote
  • 100g of sour cream
  • 100g of castor sugar

Method

  1. In a pan, cook the rice in salted water. Drain and let it cool.
  2. In a saucepan, mix the milk, butter, sugar, and egg whites. Bring to a boil and let it cool.
  3. In another bowl, mix the rice with vanilla, cream, dark chocolate, and fruit. Add sour cream and castor sugar.
  4. Whip the egg whites in a separate bowl.
  5. In a baking dish, place a layer of rice, cover with the milk and fruit mixture, and finish with the whipped egg white crust.
  6. Make a central cut in the dessert and pour the fruit compote over it.
  7. Bake for 30-40 minutes at 180°C until the crust is golden and crispy.

The story

Risalamanda is a traditional Danish dessert that originated in the 1930s. The name is said to have come from a cook's mistake, writing 'amalisa riso' instead of 'riso amalisa'.
