Ingredients

  • 200 g of rice
  • 250 ml of water
  • 50 g of sugar
  • 100 g of butter
  • 1/2 teaspoon of salt
  • 100 g of pulled sugar
  • 100 g of almonds
  • 100 g of pistachios

Method

  1. In a pot, bring water, rice, and salt to a boil.
  2. Butter a baking dish and spread the cooked rice in it.
  3. In a bowl, mix butter, sugar, and salt.
  4. Spread this mixture on a baking paper and roll it out with a rolling pin.
  5. Sprinkle the butter mixture with pulled sugar, almonds, and pistachios.
  6. Fold the edges of the baking paper and wrap the butter mixture.
  7. Chill the rétes in the refrigerator for at least 2 hours.
  8. Cut the rétes into slices and serve as a dessert or snack.

The story

Rétes is a culinary tradition dating back to medieval times, when rice paste was a reserve food during fasting periods.
