Ingredients

  • 500g fresh cheese
  • 200g sugar
  • 4 eggs
  • 100g flour
  • 100g crushed almonds
  • 100g cookies
  • 100g butter
  • 100g raspberry jam
  • 100g chestnut cream
  • 100g custard cream
  • 1/2 cup raspberry juice
  • 1/2 cup powdered sugar

Method

  1. Prepare the crust: mix the butter with flour and crushed almonds, then add the crushed cookies.
  2. Prepare the base: spread the mixture on the bottom of a baking dish.
  3. Prepare the cheese cream: mix the cream, fresh cheese, sugar, and eggs.
  4. Whip the cream: add the chestnut cream, custard cream, and raspberry juice to the cheese mixture.
  5. Whip the jam: mix the raspberry jam with powdered sugar.
  6. Assemble the cheesecake: pour the cheese mixture over the base, then spread the jam on top and finally decorate with the whipped cream.
  7. Bake the cheesecake: bake in the oven at 160°C for 40-45 minutes.
  8. Let it cool: let the cheesecake cool before serving.

The raspberry cheesecake is a variation of the traditional sernik, a cheese-based dessert, which has won the hearts of Poles with its rich balance of sweetness and acidity.
