Rabo de Toro
A classic Colombian dish featuring cow’s tail, sweet and flavorful.

Ingredients
- 2 cow's tails
- 1 onion
- 2 cloves of garlic
- 200 g zucchini
- 100 g red bell peppers
- 200 ml beef broth
- 100 ml tomato sauce
- 100 ml milk
- 1 teaspoon chili powder
- salt and pepper to taste
- 1 tablespoon olive oil
- 100 g grated cheese
Method
- Clean and cut the cow's tails into 2 cm pieces.
- In a large pot, heat the oil and sauté the finely chopped onion and garlic.
- Add the cow's tails and cook for 5 minutes.
- Add the beef broth, tomato sauce, chili powder, salt, and pepper.
- Cover and cook over medium heat for 30-40 minutes or until the meat is tender.
- Add the sliced bell peppers and zucchini, and cook for another 10 minutes.
- Add the milk and let it boil for 5 minutes.
- Serve hot, garnished with grated cheese.
