Rømmekolle

A traditional Valdres dish, Rømmekolle is a rich fermented vegetable soup.

Ingredients
- 2 liters of vegetable broth
- 100 grams of onion
- 100 grams of carrot
- 100 grams of pumpkin
- 500 grams of cauliflower
- 200 grams of chickpeas
- 100 ml of honey
- 100 ml of rømmel
- salt and pepper to taste
- 100 grams of toasted bread
- 200 grams of grana cheese
Method
- In a large pot, bring the vegetable broth to a boil. Add the chopped onion, carrot, and pumpkin. Cook for 10-15 minutes.
- Add the cauliflower and chickpeas. Cook for another 10-15 minutes.
- In a spoon, mix the honey and rømmel. Add to the broth and stir well.
- Turn off the heat and season with salt and pepper to taste.
- On a plate, place a slice of toasted bread and cover with a spoonful of the soup. Sprinkle some grated grana cheese on top.
- Serve immediately.
