Ingredients

  • 1.5 kg of pork (sausage, bacon, and ham)
  • 4 onions
  • 200 g zucchini
  • 200 g red onion
  • 100 g carrots
  • 100 g potatoes
  • 200 ml red wine
  • 500 ml beef broth
  • 50 g sugar
  • salt and pepper to taste
  • olive oil
  • cooking salt

Method

  1. Cut the pork into pieces about 5 cm wide and put it in a pot with the beef broth and red wine. Bring to a boil, cover, and cook on low heat for 2 hours.
  2. Slice the onions, zucchini, carrots, and potatoes thinly and sauté them in olive oil. Season with salt and pepper, and cook on medium heat for 10 minutes.
  3. Add the red onions and cook for another 5 minutes.
  4. In a baking dish, place the pork and surround it with the vegetable slices.
  5. Pour over the sugar and salt, cover with aluminum foil, and bake at 180°C for 1 hour.
  6. Prepare a sauce by mixing the sugar, red wine, and beef broth.
  7. Serve the Rødkål hot, accompanied by the sauce and a bit of cooking salt to enhance the flavor.
