Rødkål

A traditional Danish dish, Rødkål is a crunchy and flavorful delicacy made with pork and onions.

Ingredients
- 1.5 kg of pork (sausage, bacon, and ham)
- 4 onions
- 200 g zucchini
- 200 g red onion
- 100 g carrots
- 100 g potatoes
- 200 ml red wine
- 500 ml beef broth
- 50 g sugar
- salt and pepper to taste
- olive oil
- cooking salt
Method
- Cut the pork into pieces about 5 cm wide and put it in a pot with the beef broth and red wine. Bring to a boil, cover, and cook on low heat for 2 hours.
- Slice the onions, zucchini, carrots, and potatoes thinly and sauté them in olive oil. Season with salt and pepper, and cook on medium heat for 10 minutes.
- Add the red onions and cook for another 5 minutes.
- In a baking dish, place the pork and surround it with the vegetable slices.
- Pour over the sugar and salt, cover with aluminum foil, and bake at 180°C for 1 hour.
- Prepare a sauce by mixing the sugar, red wine, and beef broth.
- Serve the Rødkål hot, accompanied by the sauce and a bit of cooking salt to enhance the flavor.
