Prunes and Rice Pudding

A traditional Limerick Irish dessert, rich with prunes and rice.

Ingredients
- 200 g of prunes
- 200 g of rice
- 500 ml of milk
- 100 g of sugar
- 2 eggs
- 1 teaspoon of cinnamon
- 1 teaspoon of vanilla
- 50 g of caramelized sugar
- 2 tablespoons of honey
Method
- Clean and slice the prunes into small pieces. Boil the rice in water and drain.
- In a bowl, mix the rice with milk, sugar, eggs, cinnamon, and vanilla. Add the prunes and mix well.
- Pour the mixture into a non-stick pan and cook over medium heat for about 10 minutes, stirring frequently.
- Transfer the pudding to a baking dish. Sprinkle with honey and caramelized sugar.
- Preheat the oven to 180°C and bake for 20-25 minutes, until the surface is golden and the pudding is soft.
- Let it cool for a few minutes before serving.
