Potato and Mushroom Pierogies

This classic Pennsylvania Dutch dish features sweet potatoes and mushrooms wrapped in a crispy dough for a delightful treat.

Ingredients
- 400g of sweet potatoes
- 200g of mushrooms
- 2 eggs
- 250g of flour
- 100g of butter
- Salt and pepper to taste
- Oil for frying
Method
- Peel the sweet potatoes, steam them for about 20 minutes, then mash them until soft.
- Slice the mushrooms and fry them in a pan with a bit of butter until golden brown.
- In a bowl, mix the eggs with a pinch of salt and pepper.
- In another bowl, mix the flour with melted butter until you get a soft dough.
- Add the dough to the egg mixture and stir until you get a homogeneous dough.
- Divide the dough into pieces and form small pierogies, placing a spoonful of sweet potato and mushroom filling in each.
- Fry the pierogies in a pan with hot oil until golden on all sides.
- Serve the pierogies hot with your choice of sauce.
