Ingredients

  • 400g potatoes
  • 200g carrots
  • 2 eggs
  • 100g flour
  • 50g breadcrumbs
  • 1 onion
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Oil for frying

Method

  1. Peel and cut the potatoes into small cubes. Cook in salted water until soft.
  2. Peel and thinly slice the carrots. Cook for 5-7 minutes in salted water.
  3. Layer the potatoes and carrots in a bowl, add the eggs, flour, breadcrumbs, chopped onion, salt, and pepper. Mix well until you get a homogeneous dough.
  4. Heat oil in a frying pan to a moderate temperature.
  5. Form fritters with the dough, letting them sit in cold water for 5 minutes before frying.
  6. Fry the fritters in hot oil for 2-3 minutes on each side, until golden and crispy.
  7. Drain on paper towels and serve hot.
