Ingredients

  • 100g of onion
  • 50g of zucchini
  • 50g of bell peppers
  • 100g of sweet potatoes
  • 50g of carrots
  • 50g of sausages
  • extra virgin olive oil
  • salt and pepper to taste
  • 100g of grated cheese

Method

  1. Slice the onion, zucchini, bell peppers, sweet potatoes, and carrots into thin slices.
  2. In a pan, start sautéing the extra virgin olive oil with the sliced onion.
  3. Add the zucchini, bell peppers, sweet potatoes, and carrots, and sauté for 5-7 minutes.
  4. Add the sausage pieces and sauté for another 3-4 minutes.
  5. Arrange the picada on a baking tray or serving dish, seasoned with salt and pepper.
  6. Sprinkle the grated cheese over the picada and bake in the oven at 180°C for 10-15 minutes until the cheese is golden.
  7. Serve hot, crispy, and delicious.

Picada is a traditional Colombian appetizer with roots tracing back to the colonial era, when European settlers and indigenous peoples combined local ingredients with European culinary traditions.
