Ingredients

  • 200 g of carrots
  • 200 g of potatoes
  • 100 g of onion
  • 100 g of zucchini
  • 100 g of broccoli
  • 50 g of butter
  • 50 g of olive oil
  • 1 tablespoon of white vinegar
  • 1 tablespoon of sugar
  • salt and pepper to taste
  • 100 ml of vegetable broth
  • 100 ml of milk

Method

  1. Peel and cut the carrots, potatoes, onion, zucchini, and broccoli into small pieces.
  2. Boil the vegetables in salted water for about 10 minutes, then cool them in cold water.
  3. In a pan, melt the butter and olive oil, add the vegetables and season with salt, pepper, vinegar, and sugar.
  4. Cook over medium heat for 5-7 minutes, stirring occasionally.
  5. Add the vegetable broth and milk, bring to a boil and cook for another 2-3 minutes.
  6. Serving: serve hot, garnish with a drizzle of olive oil and salt to taste.
