Pfälzer Leiwsaß

A classic of Palatinate cuisine, Leiwsaß is a delicious, crunchy vegetable sauce with a rich flavor.

Ingredients
- 200 g of carrots
- 200 g of potatoes
- 100 g of onion
- 100 g of zucchini
- 100 g of broccoli
- 50 g of butter
- 50 g of olive oil
- 1 tablespoon of white vinegar
- 1 tablespoon of sugar
- salt and pepper to taste
- 100 ml of vegetable broth
- 100 ml of milk
Method
- Peel and cut the carrots, potatoes, onion, zucchini, and broccoli into small pieces.
- Boil the vegetables in salted water for about 10 minutes, then cool them in cold water.
- In a pan, melt the butter and olive oil, add the vegetables and season with salt, pepper, vinegar, and sugar.
- Cook over medium heat for 5-7 minutes, stirring occasionally.
- Add the vegetable broth and milk, bring to a boil and cook for another 2-3 minutes.
- Serving: serve hot, garnish with a drizzle of olive oil and salt to taste.
