Ingredients

  • 200 g of flour
  • 100 g of brown sugar
  • 50 g of gum sugar
  • 80 g of butter
  • 2 eggs
  • 100 g of chopped pecans
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of salt

Method

  1. In a bowl, mix the flour, brown sugar, gum sugar, and salt.
  2. In another bowl, heat the butter and eggs for 1-2 minutes.
  3. Combine the butter and egg mixture with the flour mixture, stirring well.
  4. Add the chopped pecans and vanilla extract, mixing until you get a firm dough.
  5. Prepare a baking tray with parchment paper and spread the dough evenly, forming a uniform layer.
  6. Score the surface lightly with a sharp knife.
  7. Bake in an oven at 350°F (180°C) for 15-20 minutes, until the surface turns lightly golden.
  8. Allow to cool before cutting into pieces and serving.

Pecan Sandies originated in Louisiana in the 1950s, when local pecans were very popular and people sought creative ways to use them in sweets.
