Parmigiana-style Artichokes

A Roman classic, Parmigiana-style Artichokes are crispy and flavorful, perfect as an appetizer or main course.

Ingredients
- 400 gr of artichokes
- 150 gr of canned tomatoes
- 100 gr of mozzarella
- 50 gr of cooked ham
- 2 eggs
- 150 gr of bread
- 200 ml of olive oil
- Salt and pepper to taste
- 100 gr of grated cheese
Method
- Clean the artichokes thoroughly, slice them and fry them in hot oil. Drain them.
- In a bowl, mix the eggs with the grated bread to form a crumb coating.
- Slice the mozzarella and cooked ham thinly.
- In a baking dish, place the artichoke slices, cover with mozzarella and ham slices, then add a crumb coating.
- Cover with tomato sauce and season with salt and pepper.
- Repeat with the remaining artichoke slices.
- Pour olive oil over the artichokes and sprinkle with grated cheese.
- Preheat the oven to 180°C and bake for 20-25 minutes.
- Serve hot.
The story
Parmigiana-style Artichokes originated in Rome and became popular in the 19th century when artichokes were introduced to Italy. This dish blends local traditions with French influence.
