A classic of Argentine cuisine, the sopa paraguaya is a crunchy pancake with a unique flavor.

Ingredients
- 300g of flour
- 2 eggs
- 100ml of milk
- 50g of butter
- 1 tablespoon of sugar
- 1 tablespoon of salt
- 1 tablespoon of cornstarch
- 100g of shredded cheese
- 2 tablespoons of chopped onion
- 1 tablespoon of cane sugar
- Water for cooking
- Salt for cooking
Method
- In a bowl, mix the flour, eggs, milk, butter, sugar, and salt until you get a homogeneous mixture.
- Add the cornstarch and mix well.
- In a non-stick pan, melt the butter and sauté the chopped onion for 2 minutes.
- Add the flour mixture and stir well for 2-3 minutes.
- Pour in the warm water and mix until you get a homogeneous consistency.
- Bring to a boil, reduce heat, and cook for 10-15 minutes.
- While the sopa paraguaya is cooking, prepare the cheese: mix the cheese with the cane sugar.
- Once cooked, pour the sopa paraguaya into a baking dish and let it cool.
- Spread the cheese mixture over the sopa paraguaya and bake in the oven at 180°C for 10-15 minutes.
- Let it cool and serve.
The story
Originating from Paraguay, the sopa paraguaya has become popular in Argentina, especially in the Misiones region, where it is considered a true local dish.
