Ingredients
- 2 lbs fresh oysters
- 200 g smoked bacon
- 2 onions
- 2 zucchinis
- 1 chili pepper
- 200 ml white wine
- 200 ml fish broth
- 2 teaspoons chili powder
- 1 teaspoon salt
- 2 tablespoons olive oil
- 100 g bread slices
- 200 ml fish cream
Method
- Rinse and chop the oysters, remove any beards, and set aside.
- Chop the bacon, onion, and chili pepper, and sauté in olive oil until the bacon is crispy.
- Add the zucchini and cook until tender.
- Deglaze the pan with white wine and let it reduce slightly.
- Add the fish broth, chili powder, and salt, and bring to a simmer.
- Stir in the oysters and cook until they are just opened.
- Fold in the fish cream and let it heat through.
- Serve hot with slices of bread for dipping.
