Northern Thai Spicy Pork Stew

A hearty and delicious Gaeng Tai Ped, a specialty of Northern Thai cuisine, rich in flavor and spices.

Ingredients
- 500 g of pork
- 200 ml of coconut oil
- 2 onions
- 2 red bell peppers
- 4-5 lemongrass stalks
- 2-3 spring onions
- 1/2 cup of chili
- 1/2 cup of coriander
- 1/2 cup of thyme
- 3-4 tablespoons of sake
- 1 tablespoon of chili paste
- Soysauce, salt and pepper to taste
Method
- Cut the pork into 2x2 cm pieces and set aside.
- In a large pot, heat the coconut oil and sauté the finely chopped onions for 5-7 minutes.
- Add the red bell peppers and lemongrass stalks, sauté for another 5 minutes.
- Add the spring onions, chili, coriander, and thyme, sauté for 2-3 minutes.
- Add the pork, sake, and chili paste, stir well and cook on medium heat for 20-25 minutes.
- Taste and adjust with salt and pepper, then serve hot.
The story
Gaeng Tai Ped was created in Chiang Mai, the largest city in northern Thailand, where a love for spicy cuisine has always been appreciated. This dish has become popular due to its combination of spices and pork meat.
