Ingredients

  • 4 pig hearts
  • 2 onions
  • 4 skewers of wood
  • 1 chili pepper
  • 2 tablespoons of palm oil
  • 1 tablespoon of groundnut pepper
  • 1 tablespoon of fresh ginger
  • Salt to taste
  • 1 tablespoon of thyme
  • 1 teaspoon of bay leaf
  • Water for cooking

Method

  1. Clean the pig hearts and cut them into uniform pieces.
  2. Slice the onions and finely chop the chili pepper.
  3. In a pot, heat the palm oil and add the spices, cooking for a few minutes.
  4. Add the pig hearts and onions, and cook over medium heat for 10-15 minutes.
  5. Add water, cover, and simmer over low heat for 30-40 minutes.
  6. Alternatively, you can prepare the nkwobi on a grill, using the wooden skewers.
  7. Serve hot, accompanied by sweet potatoes and polenta.
