Negro Beans
A delicious and traditional Cuban stew made with black beans, spices, and vegetables.

Ingredients
- 400 g of black beans
- 2 onions
- 2 carrots
- 2 green onions
- 1 zucchini
- 1 chili pepper
- 3 large cloves of garlic
- 200 ml of palm oil
- 2 basil leaves
- 200 ml of meat broth
- Salt and pepper to taste
- 100 ml of wine vinegar
Method
- Rinse the beans and cook them in salted water for about 30 minutes, until they are soft.
- In a large pot, sauté the large onions and garlic in palm oil.
- Add the onions, carrots, chili pepper, and green onions, sauté for 5 minutes.
- Add the meat broth and basil, bring to a boil and reduce the heat.
- Finally, add the beans, wine vinegar, salt, and pepper, stir well and let cook for 10 minutes.
- Serve hot, you can serve it with some toasted bread or with chicken or pork.
