Ingredients
- 250g basmati rice
- Water for cooking the rice
- 1 red onion, sliced
- 1 tablespoon ground turmeric
- 1 tablespoon sugar
- 1 tablespoon coconut oil
- 1 tablespoon garlic paste
- 1 tablespoon chili powder
- 1 tablespoon salt
- 1 tablespoon green onion, chopped
- 1 tablespoon fresh mint, chopped
- Natural food coloring (e.g., from pandan leaves)
Method
- Wash the rice and cook it in colored water with pandan leaves for about an hour or until the rice is al dente.
- In a pan, sauté the onion and red onion in coconut oil.
- Add the turmeric, sugar, garlic paste, chili powder, and salt. Stir well.
- Add the cooked rice and mix it well with the spices.
- Finally, add the green onions and mint, mixing well to distribute the aroma.
- Serving: Nasi Kerabu is usually served cold, so let it cool down for a bit before serving.

Nasi Kerabu originates from the Kelantan region in northeastern Malaysia, where it has been prepared for centuries as a festive and sacred dish.
