Mussels with Truffles

A traditional Sardinian dish that combines the freshness of mussels with the intense flavor of black truffle.

Ingredients
- 2 kg of mussels
- 100 g of black truffle
- 3 onions
- 3 garlic cloves
- 200 ml of white wine
- 100 ml of extra virgin olive oil
- Salt and pepper to taste
- Chopped parsley for serving
Method
- Clean the mussels with a brush or a damp cloth and rinse well.
- In a pot, cook the mussels with a little water for 5-10 minutes until they open. Remove the mussels and the cooking liquid.
- In a non-stick pan, sauté the onions and garlic in extra virgin olive oil.
- Add the chopped truffle and cook for 2-3 minutes.
- Pour in the white wine and let the alcohol evaporate for 2-3 minutes.
- Add the mussels and stir well, season with salt and pepper to taste.
- Serve hot, garnished with chopped parsley.
