Ingredients

  • 400 g of sweet plantains
  • 200 g of cassava
  • 100 ml of milk
  • 50 g of butter
  • Salt to taste
  • Black pepper, ground
  • 2 tablespoons of palm oil (optional)
  • 1 onion, chopped
  • 1 tablespoon of grated ginger
  • 1 tablespoon of ground dried chili

Method

  1. Peel the sweet plantains, cut them into pieces and boil them in salted water for about 20 minutes, until they are soft.
  2. Peel the cassava, cut it into pieces and boil it in salted water for another 10-15 minutes, until it is soft.
  3. In a pan, heat the palm oil and sauté the onion, ginger, and dried chili.
  4. Add the sweet plantains and cassava, mixing well with the sauce.
  5. Add the milk, butter, and salt, mixing until you get a smooth and soft consistency.
  6. Serving: Serve the Moumouni Yaapi warm, garnished with dried chili and palm oil.
