Ingredients
- 400 g of sweet plantains
- 200 g of cassava
- 100 ml of milk
- 50 g of butter
- Salt to taste
- Black pepper, ground
- 2 tablespoons of palm oil (optional)
- 1 onion, chopped
- 1 tablespoon of grated ginger
- 1 tablespoon of ground dried chili
Method
- Peel the sweet plantains, cut them into pieces and boil them in salted water for about 20 minutes, until they are soft.
- Peel the cassava, cut it into pieces and boil it in salted water for another 10-15 minutes, until it is soft.
- In a pan, heat the palm oil and sauté the onion, ginger, and dried chili.
- Add the sweet plantains and cassava, mixing well with the sauce.
- Add the milk, butter, and salt, mixing until you get a smooth and soft consistency.
- Serving: Serve the Moumouni Yaapi warm, garnished with dried chili and palm oil.
