Ingredients

  • 300 g of tripe
  • 200 g of sausages
  • 1 onion
  • 2 carrots
  • 2 cucumbers
  • 1 zucchini
  • 1 liter of chicken broth
  • 1 liter of water
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 tablespoon of chili flakes
  • 1 tablespoon of apple cider vinegar

Method

  1. Cut the tripe and sausages into small pieces.
  2. In a large pot, heat the olive oil and sauté the finely chopped onion.
  3. Add the carrots, cucumbers, and zucchini, and cook for a few minutes.
  4. Add the tripe, sausages, chicken broth, and water, and bring to a boil.
  5. Simmer on medium heat for about 1 hour, adding salt and pepper to taste.
  6. Add the chili flakes and apple cider vinegar, stir, and let it cool.
  7. Serving: serve hot in a bowl, garnish with fresh chopped parsley.

The story

Mondongo soup is a culinary tradition dating back to colonial times, when sailors and poor workers used every part of the pig to prepare this nutritious stew.
