Mondongo Soup

A hearty and warming soup, typical of Cartagena in Colombia, rich in sausages and tripe.

Ingredients
- 300 g of tripe
- 200 g of sausages
- 1 onion
- 2 carrots
- 2 cucumbers
- 1 zucchini
- 1 liter of chicken broth
- 1 liter of water
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1 tablespoon of chili flakes
- 1 tablespoon of apple cider vinegar
Method
- Cut the tripe and sausages into small pieces.
- In a large pot, heat the olive oil and sauté the finely chopped onion.
- Add the carrots, cucumbers, and zucchini, and cook for a few minutes.
- Add the tripe, sausages, chicken broth, and water, and bring to a boil.
- Simmer on medium heat for about 1 hour, adding salt and pepper to taste.
- Add the chili flakes and apple cider vinegar, stir, and let it cool.
- Serving: serve hot in a bowl, garnish with fresh chopped parsley.
The story
Mondongo soup is a culinary tradition dating back to colonial times, when sailors and poor workers used every part of the pig to prepare this nutritious stew.
