Medovik is a crunchy, slightly golden cake, rich in honey and cream, a true masterpiece of Moscow cuisine.

Ingredients
- 250 g of flour
- 200 g of butter
- 100 g of sugar
- 4 eggs
- 100 g of honey
- 100 g of cream
- 1 packet of baking powder
- 1/2 teaspoon of salt
- 1 teaspoon of warm water
Method
- Prepare the base: mix the flour, baking powder, and salt in a large bowl.
- Add the warm water and mix until you get a damp dough.
- In another bowl, mix the butter, honey, and sugar.
- Add the eggs one at a time, mixing well after each addition.
- Combine the damp dough with the butter, honey, and sugar mixture, mixing until you get a smooth cream.
- Make three layers of cake: one base, one cream, and one hat.
- Make the hat: mix the cream with the butter and sugar.
- Beat the eggs with the sugar and cream, add the baking powder and mix well.
- Place the hat on the cake and decorate with honey and dried fruit.
The story
Medovik is a culinary tradition dating back to the 19th century, when Moscow peasants began preparing this cake as a way to use up excess honey.
