Ingredients

  • 250 g of flour
  • 200 g of butter
  • 100 g of sugar
  • 4 eggs
  • 100 g of honey
  • 100 g of cream
  • 1 packet of baking powder
  • 1/2 teaspoon of salt
  • 1 teaspoon of warm water

Method

  1. Prepare the base: mix the flour, baking powder, and salt in a large bowl.
  2. Add the warm water and mix until you get a damp dough.
  3. In another bowl, mix the butter, honey, and sugar.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Combine the damp dough with the butter, honey, and sugar mixture, mixing until you get a smooth cream.
  6. Make three layers of cake: one base, one cream, and one hat.
  7. Make the hat: mix the cream with the butter and sugar.
  8. Beat the eggs with the sugar and cream, add the baking powder and mix well.
  9. Place the hat on the cake and decorate with honey and dried fruit.

The story

Medovik is a culinary tradition dating back to the 19th century, when Moscow peasants began preparing this cake as a way to use up excess honey.
