Ingredients

  • 300g of glutinous rice
  • 1 kg of fresh mango
  • 300 ml of water
  • 100g of sugar
  • 100 ml of coconut milk
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of coconut oil
  • Sugar for garnish
  • Banana leaves for garnish

Method

  1. Wash the glutinous rice and let it drain for 10 minutes.
  2. In a pot, combine the water, rice, sugar, and coconut milk, bring to a boil, and simmer for 20-25 minutes.
  3. Transfer the rice to a baking dish and let it cool.
  4. Cut the mango into cubes.
  5. In a bowl, mix the mango with coconut milk, sugar, and vanilla extract.
  6. Arrange the glutinous rice in a serving dish and pour the mango mixture over it.
  7. Garnish with sugar and banana leaves.
  8. Serve chilled.

The story

Khao Niao Mamuang is a traditional Thai dessert found in tropical regions where mangos are abundant. It is often enjoyed during the summer to cool the body.
