Ingredients

  • 1 kg of rice
  • 4 dl of beef broth
  • 2 dl of olive oil
  • 2 dl of butter
  • 1 dl of flour
  • 500 g of pearl onions
  • 1 onion
  • 1 dl of white wine
  • 1 dl of water
  • salt and pepper to taste
  • 1 dl of milk cream
  • 1 dl of chopped parsley

Method

  1. Make the mămăligă broth: in a pan, heat the oil and butter, add the rice and fry for a few minutes. Add the flour and stir well. Gradually add the beef broth, stirring constantly until you get a smooth and creamy consistency.
  2. Prepare the onion soup: chop the onion into cubes and sauté it in another pan with olive oil. Add the pearl onions and cook for a few minutes. Add the white wine and water, bring to a boil and simmer for 30 minutes.
  3. Prepare the mămăligă: once you have the mămăligă broth, pour it into a bowl and let it cool slightly. Form small mămăligă balls and cook them in boiling water for 2-3 minutes, then briefly immerse them in the mămăligă broth.
  4. Prepare the soup: add the mămăligă with pearl onions to the soup and stir well. Add the milk cream and chopped parsley, mix to combine.
  5. Serve: place the mămăligă in a bowl and pour the onion soup over it. Season with salt and pepper to taste.
