Ingredients
- 1 whole pig (about 3-4 kg)
- 1 liter of palm oil
- 1 kg of zucchini
- 1 kg of sweet potatoes
- 1 kg of tomatoes
- 2 onions
- 1 kg of ginger
- 1 kg of chili peppers
- 1 liter of water
- salt and pepper to taste
- 100 g of sugar
- 100 g of coarse salt
Method
- Prepare the pig: thoroughly clean the animal and cut it into pieces of about 2 kg each.
- In a large pan, fry the pig pieces in plenty of palm oil until they are crispy.
- Prepare the vegetables: cut the zucchini, sweet potatoes, and tomatoes into medium-sized pieces.
- In a pot, cook the vegetables with palm oil, water, garlic, ginger, chili peppers, salt, and pepper.
- In a separate pot, prepare the sugar and coarse salt to create a caramelized sugar mixture.
- Once the vegetables are cooked, mix them with the pig in the pan and cook them together.
- Finally, pour the caramelized sugar over the pig and vegetables, allowing it to fully dissolve.
- Let the dish cool and serve it hot, crispy, and delicious.

Lechona Tolimense originates from the city of Ibagué, where it has been a festive dish for Christmas and Easter celebrations for years, symbolizing wealth and festivity.
