Lamb and Kale Stew
A traditional Norwegian dish, Fårikål is a delightful mix of lamb and kale in a robust broth.

Ingredients
- 500 g of lamb cut into pieces
- 2 kg of kale
- 2 onions
- 2 carrots
- 2 tablespoons of olive oil
- 2 tablespoons of honey
- 2 tablespoons of water
- 100 g of flour
- 1 liter of meat broth
- salt and pepper to taste
Method
- In a large pot, heat the olive oil and sauté the onions and carrots until they are translucent.
- Add the lamb and cook until it is well done.
- In a separate pot, mix the flour with water and add to the meat broth, stirring well.
- Add the onion and carrot sauté with the lamb and the flour broth, bring to a boil.
- Add the kale and honey, reduce the heat and let it simmer slowly for 2 hours.
- Serve the Fårikål in a bowl, season with salt and pepper to taste.
- Serve hot.
The story
Fårikål has roots dating back to the 17th century and is believed to have been created to use up leftover lamb from the winter.
