Ingredients

  • 200 g of glass noodles
  • 2 bunches of mint
  • 2 onions
  • 1 mango
  • 1 pomegranate
  • 1 red onion
  • 100 g of shrimp
  • 100 g of prawns
  • 50 g of ginger
  • Honey vinegar
  • Garlic
  • Coconut oil

Method

  1. Cook the glass noodles for 3-4 minutes, then rinse them under cold water and cool them down.
  2. Slice the mint and onions thinly.
  3. Cut the mango and pomegranate into cubes.
  4. In a pan, sauté the garlic and ginger in coconut oil.
  5. Add the shrimp and prawns, cook for 2-3 minutes.
  6. In another bowl, mix the noodles, vegetables, mango, and pomegranate.
  7. Add fish stock and honey vinegar, mix well.
  8. Serve cold, garnish with pieces of mango and ginger.
