Kopács
A traditional Hungarian soup, kopács is a crunchy and flavorful vegetable soup.

Ingredients
- 400g of mixed vegetables (potatoes, carrots, onions, pumpkin)
- 200g of lentils
- 200g of beans
- 200ml of olive oil
- 1 liter of vegetable broth
- Salt and pepper to taste
- 1 tablespoon of chopped parsley
- 1 chopped onion
- 1 garlic clove
- 1 lemon
- Water for peeling the vegetables
Method
- Peel and cut the vegetables into small cubes, then soak them in water for a few minutes to cool them down.
- In a large pan, heat the olive oil and sauté the onion and garlic.
- Add the chopped vegetables and cook over medium heat for about 10 minutes.
- Pour in the vegetable broth and bring to a boil, then add the lentils and beans, cover and cook for 20-25 minutes.
- Zest the lemon and add it to the soup, stirring well.
- Season with salt and pepper, then add the chopped parsley.
- Serve hot in a bowl and enjoy the taste of Hungarian tradition.
