Ingredients

  • 200g of beef
  • 100g of pork
  • 1 chopped onion
  • 1 garlic clove
  • 1 tablespoon of chopped parsley
  • 1 tablespoon of grated ginger
  • 1 tablespoon of chili
  • 1 tablespoon of wine vinegar
  • salt and pepper to taste
  • 2 eggs
  • 1 tablespoon of olive oil
  • 100g of torn bread
  • 2 tablespoons of fennel seeds

Method

  1. Mix the beef, pork, chopped garlic, chopped onion, parsley, ginger, chili, wine vinegar, salt, and pepper in a large bowl.
  2. Add the eggs, olive oil, and torn bread, mixing well until a homogeneous dough is formed.
  3. Form the köfte with your hands, making sure they are regular in size and shape.
  4. In a hot pan with a little olive oil, cook the köfte over medium heat until they are golden on all sides.
  5. Serve the köfte hot, seasoned with salt and pepper if desired.

The story

Konya Köfte trace their origins back to the Seljuk era, when Konya was the imperial capital. The recipe has been refined over time, becoming a true culinary symbol of the region.
