Kebap Karakas

A classic of Istanbul cuisine, Kebap Karakas is a delicious and historically rich dish.

Ingredients
- 1 kg of beef
- 1 onion, chopped
- 2 cloves of garlic, minced
- 100 g of Greek yogurt
- 2 tablespoons of sugar
- 1 tablespoon of paprika powder
- 1 teaspoon of salt
- 2 tablespoons of olive oil
- 100 g of bread slices
- 1 lemon, zested
- Condiments to taste (pistachios, mint, red onion)
Method
- In a bowl, mix the beef, garlic, onion, salt, paprika powder, and olive oil.
- Form meatballs with the size of a kebab.
- In another bowl, mix the yogurt, sugar, and cream.
- Dip the meatballs in the yogurt mixture to coat them well.
- Take a bread slice, rub the meatballs with it, and then wrap the bread around the kebab.
- Take a banana leaf or a piece of parchment paper and wrap the bread-wrapped kebabs.
- Fry the wrapped kebabs in chicken fat or olive oil over medium heat for 5-7 minutes until they are well cooked.
- Serve them hot with zested lemon and your choice of condiments.
The story
Originating in the 16th century in Istanbul, Kebap Karakas was served in the sultan's palaces as a luxurious dish.
