Ingredients

  • 500g of ground meat (pork, beef or a mix)
  • 200g of rice
  • 1 onion
  • 1 garlic clove
  • 200ml of meat broth
  • 2 eggs
  • 1 teaspoon of black pepper
  • 1 teaspoon of salt
  • 100g of chopped lard
  • 100g of pancetta slices
  • oil for frying

Method

  1. In a pan, sauté the garlic and onion in a bit of oil.
  2. Add the rice and fry for a few minutes.
  3. Pour in the meat broth, stir well and cook until the rice is soft.
  4. In a bowl, mix the ground meat, eggs, pepper, and salt.
  5. Add the cooked rice and mix until you get a homogeneous consistency.
  6. Form the sausages with the obtained paste, wrapping each sausage with lard and bacon.
  7. Fry the kaszanka in a pan with a bit of oil until they are golden.
  8. Serve hot with a sauce of your choice.

The story

Kaszanka has ancient roots and can be found in many parts of Poland, but it is particularly popular in Warsaw. Traditionally prepared for Christian holidays, it is served as the main course.
