Ingredients

  • 300g of dried fruit bread
  • 3 eggs
  • 100g of sugar
  • 50g of butter
  • 1 ladle of honey
  • 100g of diced fruit (e.g., apple, cherries)
  • 1 ladle of water
  • Baking powder
  • Granulated sugar for the topping

Method

  1. Crumb the dried fruit bread into small pieces and blend it until you get a thin paste.
  2. In a bowl, beat the eggs, butter, and sugar until you get a smooth cream.
  3. Add the blended bread paste and baking powder, mixing well.
  4. In a non-stick pan, melt the butter and add the mixture of bread, cooking over medium heat until it becomes golden and crunchy.
  5. Add the honey and diced fruit, mixing well.
  6. Stop cooking and let it cool for a couple of minutes, then gently break the pancake with a fork.
  7. Serve hot with a sprinkle of granulated sugar.
  8. Enjoy!
