New Orleans Jambalaya is a hearty and flavorful dish made with chicken, shrimp, vegetables, and rice.

Ingredients
- 500 g of chicken pieces
- 250 g of shrimp
- 1 onion
- 2 carrots
- 2 celery stalks
- 2 tablespoons of dried peppers
- 2 tablespoons of red pepper flakes
- 200 g of rice
- 2 liters of chicken broth
- 1 tablespoon of red pepper powder
- 1 tablespoon of bay leaf
- 1 tablespoon of thyme
- salt to taste
Method
- In a large pan, sauté the onion, carrots, celery, and dried peppers in a bit of oil.
- Add the chicken and shrimp, cook until the meat is well done.
- Add the rice, stir well to toast it a bit, then add the chicken broth and all the seasonings.
- Cook on medium heat for about 20 minutes, stirring occasionally, until the rice is al dente.
- Turn off the heat and let it rest for 5 minutes before serving.
- Season with red pepper powder and bay leaf to taste.
