İskender Kebab
A classic dish from Bursa, İskender Kebab is a grilled beef dish served with fresh and flavorful accompaniments.

Ingredients
- 500g of beef
- 2 bell peppers
- 2 slices of whole wheat bread
- 2 onions
- 100ml of olive oil
- 100ml of Greek yogurt
- 2 tablespoons of wine vinegar
- 1 tablespoon of black pepper
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 2 mint leaves
- 2 basil leaves
Method
- Cut the beef into even pieces and season with pepper, salt, sugar, and olive oil.
- Prepare the broth by mixing yogurt, wine vinegar, pepper, salt, and sugar.
- Slice the onions thinly and cut the peppers into strips.
- Fry the beef in a hot pan with olive oil.
- In another pan, fry the onions and peppers in olive oil.
- Place the bread slices with the beef and vegetables, and top with the broth.
- Add the mint and basil leaves.
- Serve hot.
The story
İskender Kebab originated in Bursa, a historic city in Turkey, possibly in the 17th century, and is said to have been invented by a local imam.
