Ingredients
- 500 g of lamb cubes
- 3 large potatoes
- 2 onions
- 2 sprigs of thyme
- 2 sprigs of rosemary
- 1 liter of meat broth
- 200 ml of white wine
- 2 tablespoons of butter
- 1 tablespoon of flour
- salt and pepper to taste
- 1 onion
- 1 zucchini
Method
- In a large pot, melt the butter and sauté the sliced onions over medium heat until they become golden.
- Add the lamb and cook for a few minutes, stirring frequently.
- Pour in the meat broth, white wine, thyme, and rosemary. Bring to a boil, then reduce heat and simmer slowly for 1 hour.
- Cut the potatoes into cubes and add them to the pot. Cook for another 30 minutes.
- In a bowl, mix the flour with a little warm broth. Add to the pot and stir well.
- Season with salt and pepper. Cook for another 10 minutes.
- Serve hot, accompanied by sliced zucchini.

Irish stew has its origins in poor Ireland, where families used inexpensive ingredients to prepare a warm and nourishing meal.
