Ingredients

  • 500 g of beef, cubed
  • 2 onions, chopped
  • 2 carrots, sliced
  • 1 zucchini, sliced
  • 2 liters of beef broth
  • 200 g of beans
  • 100 g of cucumbers, sliced
  • 1 tablespoon of red pepper flakes
  • 2 mint leaves
  • salt and pepper to taste
  • olive oil
  • 2 cloves of garlic, sliced

Method

  1. In a large pot, heat half the olive oil and add the beef, cooking over medium heat until it is browned on all sides.
  2. Remove the beef from the pot and add the onions, carrots, and red pepper flakes, cooking until the onions are translucent.
  3. Return the beef and garlic to the pot, add the beef broth, zucchini, cucumbers, and mint leaves, stir well.
  4. Bring to a boil, reduce the heat and let simmer on low heat for about 1 hour or until the beef is tender.
  5. Add the beans and cook for another 15 minutes or until the beans are al dente.
  6. Season with salt and pepper to taste, serve hot.
