Hummus
The classic hummus, a crunchy and creamy fava bean dip, perfect for an appetizer or side dish.

Ingredients
- 400 g of fava beans
- 100 g of olive oil
- 2 shallots
- 3-4 garlic cloves
- 1 tablespoon of white vinegar
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 tablespoon of sugar
- 2-3 tablespoons of water
Method
- Rinse the fava beans and cook them in salted water for about 30 minutes, or until they are tender.
- Peel the fava beans by hand or with a fork.
- Pit the fava beans with the olive oil in a blender or a bowl and blend until smooth.
- Add the shallots and garlic, and finely chop them.
- Add the white vinegar, salt, black pepper, and sugar, and blend finely.
- If the hummus is too thick, add water and blend finely.
- Spoon the hummus into a plate and serve immediately.
- Serve the hummus with slices of toasted bread or pieces of vegetables.
