A delicious potato pancake with turnip tops and spices, typical of the Dalarna region in Sweden.

Ingredients
- 300 g of potatoes
- 100 g of turnip tops
- 2 eggs
- 50 g of rye flour
- 1 tablespoon of seed oil
- Salt and pepper to taste
- 1 tablespoon of sugar
- 1 tablespoon of wine vinegar
- 1 tablespoon of sour cream
Method
- Wash the turnip tops thoroughly and cut them into small pieces. Cook them in salted water for 10 minutes, then cool them under cold water and dry well.
- Wash the potatoes and cut them into thin slices. Cook them in salted water for 15 minutes, then cool them and dry well.
- In a bowl, mix the potatoes, turnip tops, eggs, rye flour, seed oil, salt, sugar, wine vinegar, and sour cream.
- Form small pancakes with the dough obtained and fry them in a hot pan with seed oil.
- Serve them hot, accompanied by a sauce of your choice.
The story
Hjortronmacka is a traditional dish from the northern part of Sweden, particularly popular in the Dalarna region. Originally made with local and simple ingredients, it has become a culinary symbol of the area.
