Hazelnut Sernik

A traditional Polish dessert, soft and crunchy, made with hazelnuts and sugar.

Ingredients
- 300g hazelnuts
- 200g sugar
- 2 eggs
- 100g butter
- 1 teaspoon vanilla extract
- 100g cocoa powder
- 100g pulled sugar
- 100g fresh cream
Method
- Line a baking tray with parchment paper.
- Grind the hazelnuts finely in a food processor.
- In a bowl, mix the butter, sugar, and eggs until smooth.
- Add the vanilla and ground hazelnuts, mixing well.
- Pour the mixture into the prepared baking tray and bake at 375°F (180°C) for 30-40 minutes, until golden.
- Remove from the oven and let it cool.
- In another bowl, mix the fresh cream, cocoa powder, and pulled sugar.
- Spread the cream mixture over a serving plate and decorate with the hazelnuts.
- Once the sernik is cold, spread the cream mixture over it with a spoon.
- Serve cold.
