Ingredients

  • 200g of chorizo
  • extra virgin olive oil
  • salt
  • pepper
  • 1 onion
  • 2 garlic cloves
  • 1 lemon
  • 1 basil leaf
  • 1 bay leaf

Method

  1. Slice the chorizo thinly and set aside.
  2. In a pan, heat a bit of extra virgin olive oil and sauté the garlic and onion until golden brown.
  3. Add the chorizo and cook for a few minutes, stirring frequently.
  4. While the chorizo is cooking, prepare a marinade with lemon juice, salt, pepper, minced garlic, and basil and bay leaves.
  5. Once the chorizo is cooked, remove from heat and marinate it for 10-15 minutes.
  6. Finally, grill the chorizo on a plancha or a grill for a few minutes until it becomes crispy.
  7. Serve it hot with lemon juice and basil leaves for garnish.
