Green Curry is a spicy and aromatic dish, perfect for a warm and inviting meal.

Ingredients

  • 200g of minced beef
  • 100g of mixed vegetables (zucchini, bell peppers, onions)
  • 200ml of chicken broth
  • 2 tablespoons of green curry paste
  • 200g of leafy greens
  • 100g of leafy greens
  • 1 onion
  • 2 garlic cloves
  • 1 lemon
  • 100g of vermicelli
  • salt and pepper to taste
  • 2 tablespoons of coconut oil

Method

  1. In a pan, heat the coconut oil and sauté the garlic and onion until golden brown.
  2. Add the vegetables and cook for 5 minutes.
  3. Add the leafy greens, broth, curry paste, and salt and pepper. Bring to a boil and cook for 10 minutes.
  4. Add the beef and cook for an additional 5 minutes.
  5. Finally, add the vermicelli and cook until al dente.
  6. Squeeze the lemon and mix the juice into the curry.
  7. Serve hot with fresh sliced vegetables.
