Gorrite (Groundnut Cake)

A traditional sweet from Kano City, Nigeria, soft and rich in groundnuts.

Ingredients
- 200 g of flour
- 100 g of peanut syrup
- 100 g of sugar
- 4 eggs
- 50 g of groundnuts, crushed
- 1 packet of baking powder
- 1 teaspoon of vanilla extract
- 1 teaspoon of oil
Method
- In a bowl, mix the flour, baking powder, and crushed groundnuts.
- In another bowl, beat the eggs and sugar until you get a creamy mixture.
- Add the peanut syrup, oil, and vanilla extract to the egg and sugar mixture, stirring well.
- Finally, gently fold the egg and sugar mixture with the flour and crushed groundnuts.
- Let the mixture rest for 10 minutes.
- Prepare cupcake molds and pour the mixture into them.
- Bake in a preheated oven at 180°C for 20-25 minutes, checking for doneness with a toothpick.
- Let them cool before serving.
