Ingredients

  • 200 g of flour
  • 100 g of peanut syrup
  • 100 g of sugar
  • 4 eggs
  • 50 g of groundnuts, crushed
  • 1 packet of baking powder
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of oil

Method

  1. In a bowl, mix the flour, baking powder, and crushed groundnuts.
  2. In another bowl, beat the eggs and sugar until you get a creamy mixture.
  3. Add the peanut syrup, oil, and vanilla extract to the egg and sugar mixture, stirring well.
  4. Finally, gently fold the egg and sugar mixture with the flour and crushed groundnuts.
  5. Let the mixture rest for 10 minutes.
  6. Prepare cupcake molds and pour the mixture into them.
  7. Bake in a preheated oven at 180°C for 20-25 minutes, checking for doneness with a toothpick.
  8. Let them cool before serving.

Gorrite, or groundnut cake, is a beloved sweet in Kano City and the rest of Northwestern Nigeria, where the recipe has been passed down from generation to generation.
