Gallo Pinto
Gallo pinto is a traditional Colombian dish that combines fried rice and beans in a flavorful salsa of peppers and spices.

Ingredients
- 1 kg of beans
- 500 g of rice
- 2 onions
- 2 tomatoes
- 2 red peppers
- 2 scallions
- 3 tablespoons of olive oil
- 1 teaspoon of black pepper
- 1 teaspoon of salt
- Wine vinegar to taste
- 1 tablespoon of chopped onion
- 200 ml of vegetable broth
Method
- In a pot, cook the beans with vegetable broth for about 1 hour or until they are tender. Drain and let them cool.
- Sauté the rice in a pan with olive oil for about 5 minutes, stirring frequently.
- Dice the onions, tomatoes, peppers, and scallions into small pieces.
- In a pan, sauté the olive oil with the chopped onion for 2 minutes, then add the black pepper and salt.
- Add the peppers, tomatoes, and scallions, and cook for 10 minutes, stirring frequently.
- Finally, add the beans and vegetable broth, mix well and cook for another 10 minutes.
- Serve the gallo pinto hot, garnished with chopped onions.
