A traditional Nigerian dish, fufu with light soup is a delightful, crunchy, and home-cooked treat.

Ingredients
- 200g of yuca
- 1 liter of water
- 1 onion
- 200g of sweet potatoes
- 100g of seasonal vegetables
- 200ml of palm oil
- Salt to taste
- Black pepper to taste
Method
- Peel and cut the yuca into pieces and boil in salted water for about 30 minutes, until soft.
- Peel and cut the onion and sweet potatoes into small pieces.
- In a pan, heat the palm oil and sauté the onion until it turns golden brown.
- Add the sweet potatoes and seasonal vegetables, and cook over medium heat for 10 minutes.
- Add boiling water and let it boil for 15 minutes, adding salt and pepper to taste.
- While the soup is cooking, mash the yuca with a mangle and mix until you get a smooth and homogeneous paste.
- Serve the fufu hot with the light soup, garnished with seasonal vegetables if desired.
The story
Fufu is a traditional home-cooked porridge widely enjoyed in Nigeria, traditionally made from yuca or cassava. Its origins date back to pre-colonial times when it was a staple among rural communities.
