Fiskekaker, the traditional fish cakes from Lofoten, are crispy and salty snacks that resemble baked fish.

Ingredients
- 200 g of drained and cubed fish
- 1 egg
- 100 g of rye flour
- 50 g of butter
- 1 chopped onion
- 2 tablespoons of chopped parsley
- Salt and pepper to taste
- Oil for frying
Method
- In a bowl, mix the fish, egg, rye flour, chopped onion, parsley, and salt and pepper to taste.
- Let the mixture rest for 30 minutes.
- In a pan, melt the butter and oil, then add the fish mixture.
- Fry over medium heat for 10-15 minutes, stirring frequently.
- Serve hot with extra salt and pepper.
The story
Fiskekaker were invented as a way to use every part of the fish, especially during Catholic fasting periods, and have become a culinary symbol of the region.
