A classic of the Marche region, the Fermo Sheep Cheese is a sweet and aromatic goat cheese.

Ingredients
- 500g of Fermo goat cheese
- 100g of sugar
- 50g of lemon zest
- 200ml of goat milk
- 50g of cinnamon powder
- 50g of star anise powder
- Salt to taste
- 100g of durum wheat flour
- Cold water as needed
Method
- Prepare the Fermo goat cheese and cut it into small cubes.
- In a pan, mix the cheese, sugar, lemon zest, cinnamon, and star anise.
- Add the goat milk and stir well.
- Cook on low heat, stirring frequently, until a creamy consistency is achieved.
- Stir in the durum wheat flour and continue to stir until the cream has thickened.
- Season with salt and add some cold water if the cream is too thick.
- Serve fresh, garnished with lemon slices.
The story
The Fermo Sheep Cheese is a traditional Marche cheese with a history dating back to the 17th century, when it was introduced to the region by shepherds from Puglia.
