Eba and Pepper Soup

A traditional Nigerian dish, soft and nutritious, served with a spicy pepper soup.

Ingredients
- 200g of eba
- 1 liter of water
- 1 onion
- 200g of peppers
- 2 tablespoons of oil
- 1 chili pepper
- 1 tablespoon of herbs
- Salt to taste
- Palace vinegar to taste
Method
- In a pot, put the eba and water. Bring to a boil and cook for 15-20 minutes, stirring occasionally.
- In another pot, heat the oil and sauté the onion until it turns golden.
- Add the peppers and cook for 5-7 minutes.
- Add the chili pepper, herbs, and salt. Stir well.
- Add the cooked eba and its broth to the pot with the pepper sauté. Stir well and cook for another 5-10 minutes.
- Serve hot with palace vinegar to taste.
