Devonshire Clotted Cream

Ingredients
- 500 ml of milk
- 1 teaspoon of sugar
- 1 teaspoon of sugar (for the crust)
- 1 gelatine leaf
- 200 ml of water
- Salt to taste
- 1 teaspoon of vanilla (optional)
- 1 teaspoon of sugar (for the crust)
Method
- Bring the milk to a boil in a pan and add the salt and sugar.
- Let the milk cool for about 12 hours at room temperature.
- Dissolve the gelatine in warm water and gently mix it into the milk.
- Leave the milk uncovered at room temperature for 12-24 hours until a dense crust forms on the surface.
- Remove the crust and serve the fresh cream either with granulated sugar or with the crust.
- Add vanilla if you want a deeper flavor.
The story
Devonshire clotted cream was accidentally created in the 19th century when farmers left their milk out to form a rich, dense crust on the surface.
