Ingredients

  • 500 ml of milk
  • 1 teaspoon of sugar
  • 1 teaspoon of sugar (for the crust)
  • 1 gelatine leaf
  • 200 ml of water
  • Salt to taste
  • 1 teaspoon of vanilla (optional)
  • 1 teaspoon of sugar (for the crust)

Method

  1. Bring the milk to a boil in a pan and add the salt and sugar.
  2. Let the milk cool for about 12 hours at room temperature.
  3. Dissolve the gelatine in warm water and gently mix it into the milk.
  4. Leave the milk uncovered at room temperature for 12-24 hours until a dense crust forms on the surface.
  5. Remove the crust and serve the fresh cream either with granulated sugar or with the crust.
  6. Add vanilla if you want a deeper flavor.

The story

Devonshire clotted cream was accidentally created in the 19th century when farmers left their milk out to form a rich, dense crust on the surface.
