A classic of Copenhagen cuisine, the Danish hot dog with its crispy texture and remoulade sauce.

Ingredients
- 4 hot dogs
- 150 g smoked pancetta
- 1 onion
- 100 g grated cheese
- 50 ml ketchup
- 50 ml remoulade sauce
- 1 bay leaf
- salt, pepper
Method
- Fry the smoked pancetta in a pan until crispy, then remove the pieces and set aside.
- Slice the onion thinly and fry in a pan with a little oil until golden brown.
- In a bowl, mix the ketchup and remoulade to make the sauce.
- Wrap the hot dogs with the smoked pancetta and onion in a serving dish.
- Sprinkle the sauce over the hot dogs and top with grated cheese and a bay leaf.
- Season with salt and pepper to taste.
- Serve hot.
